4 Weeks to Fill Your Freezer Day 14…Chicken, Broccoli, and Rice Casserole

Today’s freezer cooking was a recipe I had not made before, Chicken Broccoli Rice Casserole. Since this recipe calls for cream soup, I use a mix recipe for it. I found the cream soup mix recipe at Living on a Dime. I use Vance’s DariFree for the dry milk to make it dairy free. I mix up a batch and then it is ready when ever I need it.

So here is what I did today.

First I cooked the chicken and the rice. Once the chicken was cooked and had a chance to rest a while, I cut it up into bite sized pieces. I had too keep a close eye on the chicken as our cat was very interested in eating it herself. She can actually reach up on the cutting board from the floor. That is why all the chicken is in the middle of the cutting board. 🙂

I cooked the broccoli. All I had for broccoli was a 12oz package of frozen broccoli so I used it. I added the broccoli to the chicken and the rice. I put the bowl in the refrigerator to cool while I was making the soup.

While the cream soup was cooking. I soaked my dried mushrooms to add to the cream soup. The recipe called for cream of mushroom and cream of chicken so I wanted to make sure to add some mushrooms. I have used canned mushrooms cut up before and they work well too.

Once the soup was done, I added the mushrooms. I also added a little chicken broth powder to help increase the flavor of the soup mix. Azure Standard sells a really good chicken broth powder that is more natural than the chicken bouillon at the store.

I let the soup cool just a little and then added it to my bowl. I had to have a little taste. It was really good. I know we will all like this recipe.

I did not add any cheese to the mix. I will put some goat or sheep cheese on top when I bake it. The recipe said this amount would make two 8×8 pans so I divided it into 2 bags for the freezer. I just made one batch not sure if we would like it. But now I wish I would have made a double batch. I will know better for next time.

This recipe  is so easy and quick, it will become a regular at our home. I saw yesterday that my friend Erin over at My Mommy World made cinnamon roll biscuits out of the homemade baking mix she had made earlier this month. They looked so good I decided to use some of my homemade baking mix to make some Cinnamon Twist Scones. I was not sure how much mix to use as I usually mix them up by the recipe and not a baking mix. But they turned out well.

We have not made them in a while but now that I know I can make them with the baking mix I am sure we will have them more often. Next month I will post the recipe on how to make them.

Monday’s freezer cooking will be italian chicken. The italian chicken recipe is one I have made often and my whole family loves it. It also makes the house smell great while it is cooking.

  1. Those twists look great! I might have to try them soon…

    I really enjoyed the chicken broccoli casserole. My kids didn’t like it too much, but my husband and I certainly enjoyed it. I don’t understand why my kids are so picky lately…they always ate well as babies and tried mostly everything I put in front of them.

    1. My daughter is really good about eating anything we are eating. My son can be a little picky but usually he will eat good. I think kids just go through phases.

    1. I have not made this dish before but I have made cooked rice with a sauce and froze it. I think if you undercook it a little and make sure to drain off all the water if there is any after cooking the rice, you should be alright. Also I have found brown rice holds up better in the freezer than white rice. You might try making a half batch and see how it does for you. That way if it is not a hit with your family there is not that much to eat.
