Menu Plan Monday

We are having chicken a few times this week. I am cooking our Thanksgiving dinner at our house and we will be having family over. I also have a tradition to make turkey enchiladas the day after Thanksgiving. It is an easy meal after cooking so much the day before and it is a good way to use leftover turkey without it being the same old thing as the day before.

Dinners

Cashew Chicken Stir Fry with Rice
Chicken and Vegetable Crustless Quiche with Fruit
Beef and Celery with Noodles, Salad and Fruit
Grandma’s Pork Chops, Roasted Potatoes and Veggies and Salad
Thanksgiving Dinner, Turkey, Yams, Mashed Potatoes, Salad and Rolls
Turkey enchiladas, Salad and Chips and Salsa
Spaghetti, Salad and French Bread

Lunches

Sandwiches, chips and fruit
Soup and bread sticks
Leftovers
Tuna Sandwiches

Breakfasts

Muffins, Eggs and Sausage
Pancakes, Eggs and Sausage
Toast, Eggs and Oatmeal

  1. I love cashew chicken! I am not hosting but will be taking various dishes. For the beginning of the week I am planning to make chicken taco salad, chicken fajitas, and Mexican gumbo. Do you sense a theme? 🙂

  2. I am hosting some friends this year for Thanksgiving as both of us live far away from our families. Usually I make Turkey Corn Chili the day after, which like enchiladas, is completely different from the day before, but uses some of the leftovers. It’s really fast and easy to make too, which is great after cooking for so long the day before.

    1. I love making an easy meal after cooking so much on Thanksgiving. I also make my turkey soup kits the day after Thanksgiving so we have good soup for at least a few meals to come.
