Menu Plan Monday, April 20th

It’s Monday the start of a new week and do you know what you’re cooking? Make your meal plan and be prepared. Maybe even get your whole family to help plan. My kids helped this week.

My kid’s helped me plan our menu for this week. We will be using a chicken soup kit from the freezer for the chicken egg noodles. If you’ve never made homemade noodles they aren’t as hard as they sound. 

My kids love tacos, so they are on the menu too. Along with a long time family favorite of chili cornbread. Chili with cornbread on top, what’s not to like about that?

We are sticking with the cornbread theme for lunch one day this week and I’m making corn dog muffins. We haven’t had them for a while and the kids do like them.

My husband loves omelets. We are having breakfast for dinner one night this week. We do this often for a couple fo reasons. Breakfast can be an inexpensive meal. And it’s easy to make after a busy day. 

Also for breakfast we will be having dairy free chocolate chip scones, they are so good. You need to try them if you haven’t already. I can’t wait for the weekend to make them.

Here’s what’s cooking at our house this week

Dinners

Easy Yummy Dinner Recipe

Chili Cornbread, Salad, and Fruit

Tacos, Refried Beans, Salsa and Chips

Chicken Egg Noodles, Mashed Potatoes, Green Beans 

Omelets, Hash Browns, Fruit, and Toast

Easy Sesame Chicken, Rice, and Stir Fry Vegetables

Slow Cooker White Bean Soup, Quick Dinner Rolls, and Fruit

Lunches

Leftover most days

Corn Dog Muffins, Chips, and Fruit

Burritos, Chips and Salsa, and Salad

Breakfast

I don’t think you can ever have too many breakfast recipes. This chocolate chip scone recipe is one of our favorites. These chocolate chip sones have no heavy cream, in fact they are dairy free scones. Another plus is you can make them in the skillet, so you don’t have to heat up the house on warmer days to bake them.

  2. Yum, dinner at your house sounds so delicious!

    I tried making corn dog muffins a couple of years ago, and they didn’t turn out well. I’ll have to try out your recipe one day…I know my kids would love them, and it would be an easy thing to pack in their school lunches.
