For our meals this week, we’ll be eating from a freezer for some of our meals. I’ll be using pork chops from the freezer and Italian chicken from the freezer. I’ll also be making one of my favorite dishes I haven’t made in awhile, beef stew.

I love beef stew but we haven’t had it for a while. It funny how you can get stuck in a rut eating similar dinners week to week until you come across a recipe you haven’t had in a while. I should really flip through my recipes more often.

Here’s what’s cooking at our house this week,

Breakfasts

I know in the fall, when there’s newly picked apples to be had, I love to make apple recipes. There is just something about fall and apples. This mini apple muffin recipe is really delicious. I added a nut crumble topping to them to add a little crunch and extra flavor. This recipe can be made dairy and egg free too.

  1. I know what you mean about being stuck in a food rut. I feel like that’s how we’ve been for the past few weeks. This week I’m making something that we haven’t had in ages…Cowboy Grub, which is just basically ground turkey, beans, corn, brown rice, tomatoes and peppers cooked together in a skillet. It’s easy to make and is pretty tasty.

  2. Erin that sounds good only I use grd chuck, and call it Texas Hash

    Using up meat by dates is making cooking interesting. I decided what meat to use & go get the oldest of it. so
    Sunday Steak sandwiches, ven fries, spinach
    Mon.-leftover chicken cutlets reinvented into chicken with melt gouda on garlic toast,Asian salad & strawberries
    Beef tacos, trimmings & broccoli
    chicken & sausage pasta, salad
    Beef pot pie( leftover taco meat) & broccoli
    French toast casserole & scrambled eggs
