Menu Plan Monday, January 16th

This year I’m really trying to keep our food waste to a minimum. I’m trying to plan at least one meal a week to use up our vegetables and not let any go to waste.

I like to make soups and stir fry to do this and this week we’ll be having chicken stir fry to make sure to use the vegetables up.

Plus we often eat our leftovers from the night before, for lunch, to make sure those leftovers don’t sit in the refrigerator and grow mold.

We’re also having soup this week because I love to make soup this time of year and it makes for an inexpensive meal. Plus soup goes well with the cold weather we have forecast for this week.

We’ll also be having glazed pork chops. These pork chops are so delicious and easy to make. We save money on pork chops by buying a full pork loin at the store, either Costco or our local grocery store, and cutting our own.

I know in the fall, when there’s newly picked apples to be had, I love to make apple recipes. There is just something about fall and apples. This mini apple muffin recipe is really delicious. I added a nut crumble topping to them to add a little crunch and extra flavor. This recipe can be made dairy and egg free too.

  1. I love soup this time of year too! We just had our favorite turkey corn chili on Sunday night…it was so good for lunch on Monday too 🙂
