Menu Plan Monday, January 17th

I have a confession to make. My freezer is so stuffed full right now, I can’t really fit much more in. I really want to purchase a pork loin to make pork chops.

We are almost out of pork chops,  but I don’t see where I could possibly fit them in right now.

I have a bunch of chicken and lots of ham from the two ham holiday dinners I made. Along with all the frozen fruit, vegetables, and smoothie packs, the freezer is just stuffed full.

To help with our bulging freezer situation we will be eating some of our meals from the freezer this week.

I’ll be making soup for lunch at least once this week, to use up some of the soup kits, I made over the last couple of months.

I also need to sort through some of the baked goods that are on the top shelf of the freezer. Some of them have been in there for a while and may need to go.

Breakfasts will be the usual, toast and eggs, during the week with some special breakfasts on the weekends.

I’m planning on making cinnamon twists and waffles this week.

I love how easy these cinnamon twist scones are to make. They are as easy to mix up as biscuits, but turn out looking so fancy. Great for breakfast or brunch when company is coming over. They are also a frugal breakfast recipe costing only $.10 each. My family gobbles these up every time I made them.

  1. We are using up items in the freezer also. I’ve notice I have a lot of “raw” ingredients in the freezer and very little “freezer meals.” I’m hoping to get a few freezer meals in there over the next few weeks. Hopefully by the time April or May rolls around my freezer will be ready to start receiving items from the 2015 garden. Theres a zaycon sale coming up next month and I’d love to get in on it, but I have zero freezer space right now. I’ll make some room and hopefully hit a good sale later.

    1. I know I really need to get the freezer pared down for new arrivals from the garden too.I just realized how many sugar snap peas I have in there last night, as they kept falling out at me. 🙂 I thought if I start now, maybe by spring I’ll have some room. The good thing about Zaycon Foods is there is always another sale around the corner and their prices stay pretty consistent.

      1. I quit growing peas because, I’m not good at it. I don’t know why but I can grow the heck out of tomatoes but not peas. At our farmers market each year there is a truck that comes with it’s bed lined in plastic and they have preshelled peas that they sell for cheap! you can’t beat it. I usually buy $15 worth and share them with my mom. Do sugarsnap peas have the round pea in them? If so my mom likes to cook them with her white rice, I think it’s a japanese thing, but it sure is good. Just an idea!

        1. Sakura, yes the sugar snap peas have the pea inside of an edible pod. I’ll have to give them a try with white rice, sounds good.

          Sounds like you have a great source for peas, so you don’t have to grow them or shell them. Peas can be a little finicky. They need just enough water, but not too much. You have to plant them early, they don’t like weather above 70 degrees and you have to pick them daily to keep them producing well. The first few years I grew peas, it was a miserable failure.

  2. Sounds like a yummy week of meals, Shelly! I wish my freezer was stuffed. LOL I was just having a conversation with my husband over the weekend about how it’s hard to keep food in the freezer/fridge for too long before it’s gone. I watch some YouTube moms with stuffed extra freezers, and I’m like…wow. It would cost us A LOT to have the kind of back up food they have. Our family just goes through food so quickly these days. It’s like I woke up one morning and 4 of our 5 kids were eating like adults. It’s been this way for a while…but I’m still hoping that sometime in the future we’ll be able to keep the freezer stocked for more than a week.
