Menu Plan Monday, January 24th

Is your meal plan ready for the last week of January? I have ours planned and it has some easy and delicious dinners.

I can’t believe this first month of the year is almost gone. Pretty soon we will be having great weather and working out in the yard. I can’t wait.

This week on our menu plan is a dinner we haven’t had in a while, it’s taco bowls. Since my family loves Mexican food I’m sure it will be a big hit.

The rest of our dinner plan is full of family favorites, like pizza and twice baked taco potatoes.

I always have high hopes to be able to put away a few of the twice baked taco potatoes but we never have any leftovers even when I make a double batch. 

I’ll be making cheesy ham and potatoes this week to use up some of the ham hanging out in my freezer. It is so good and I have dairy free options too, so even if you need to eat dairy free you can enjoy this easy slow cooker dish. 

Lunches will be more of the usual for us this week. Although I will be making grilled sandwiches one day for lunch. My son is sure to love them.

Breakfasts will be our usual every weekday toast and eggs with maybe rice cereal if we have rice leftover from dinner.

Breakfast

This whole wheat pancake recipe is easy to make and healthy too. It doesn’t contain eggs or oil. You can make it dairy free by using almond milk or another non dairy milk. It’s a great weekend breakfast but fast enough to be made on a weekday too. Even though these pancakes are made with whole wheat, they are light and fluffy.   1. Those Chicken Taco Bowls look good. I love meals like that. They are so easy and flavorful. Your Hoisin Meatballs look good too. I like to make big batches of meatballs to keep in the freezer and this would be a great way to use those.

  2. We love the Taco Chicken Bowls from Budget Bytes! They are the easiest thing in the world to make, plus they are delicious!

    I’ve been meaning to try your taco potatoes, because I think that would be something our family would like. We had a baked potato bar for dinner last week and it was SO good…warm potatoes are the best for cold winter nights 🙂
