Menu Plan Monday, July 18th

Today is Monday and that means it time to plan our meals for this week. I know planning meals isn’t fun or glamorous but it sure takes the stress out of meal time.

When you don’t plan your meals you end up thinking all day about what to make for dinner. That takes a lot of brain power you could be using on other things.

I found frozen salmon fillets in the freezer so those are making an appearance on our menu this week.

We love salmon I just don’t love the price all that much. But when I find a good deal I like to buy salmon for the freezer.

I make homemade tartar sauce to go with it. It’s easy to make if you haven’t tried before. 

The rest of the week we will be having some of our favorite meals.

One of our favorite meals is pasta shell enchiladas. It’s enchiladas wrapped up in a large pasta shell. They are great for something different from the regular enchiladas. 

We’ll also be having chicken fajitas. They are delicious and easy to make from the freezer. This is a great recipe to make when you find pepper on sale. 

We found the glazed pork chop recipe about a year ago and it is so easy to make. And everyone in our family loves it too. If you like pork chops that recipe is a great way to make them. 

If you haven’t ever tried tofu before you might give the southern fried tofu recipe a try. Even my picky eater will eat it.

Light and Fluffy Waffles are easy to make with this recipe. It does take a few steps but the waffles are so worth it.

  1. Hi, your menu plan looks yummy. I have a question, what is your price point for fish or Salmon? I’ve been incorporating it more into our meal plans but find that it varies so much.

    1. Sakura, the price point varies for which kind of fish I’m buying. If it’s tilapia, my buy price is $2.99/lb. For Salmon fillets it’s $4.99/lb, and canned $2.50 a large can that I take the bones out. Halibut I’ll go as higher but not more than $9/lb, it’s only on very special occasions I will purchase halibut, I have seen it as low at $5.99/lb but not recently. Cod I like to get for $3.99/lb or less. We don’t eat a lot of fish because the prices can really vary, like you mentioned. I try to grab as much as I can afford when I find it on sale. I hope that helps. What prices do you buy at?

      I wanted to also thank for the suggestion to cook the sugar snap peas with rice. We have enjoyed our peas that way quite a few times recently and it’s something I will continue to do in the future. Thanks so much for the suggestion. 🙂

      1. I’ve never set a price point for fish, I buy Salmon from a family in Utah that owns a fishing outfit in Alaska. They fish it, freeze it and ship it here but I pay a lot for it. I think I pay $10/lb. If I buy Salmon at our stores it’s around $6.99 a pound. Sometimes we’ll go fishing and catch trout, but it’s hard because our limits are so small now. Tilapia I’ll buy frozen at Smiths and I think it’s roughly $3.99/lb. You can buy fresh Tilapia here at the oriental markets for about $3/lb but then you have to fillet it yourself.

        I’m glad you like the rice and peas, my mom makes it every spring. As for my garden this year it didn’t happen. I had so much travel with work and the weather earlier has been so weird I didn’t get one in the ground. I’m going to try for a fall and winter garden, but that will mostly be greens.

  2. I’m making some of my husband’s favorite foods this week, since he’s been out of town for a couple of weeks…pork chops, BBQ meatballs and spaghetti are just a few of the things he likes best.

  3. Thank you for the encouragement to meal plan. My husband and I are retired so cooking for the two of us is harder. Sometimes its easier to just go grab something fast food. It is not easier on the pocket book. I like that you don’t have one for each day. So I am going to try just listing the things that I have on hand for the week and maybe one special meal. Thank you again. I love your page!
