Menu Plan Monday, March 21st

This week is another simple meal plan week. I try to keep all of my meals easy to make, so I don’t have an excuse to eat out.

This week we are having pork roast, made from a pork loin from Costco. You can save quite a bit by cutting your own pork chops and roasts from a pork loin.

My daughter wanted to have the southern fried tofu. I think because I started my kids eating a variety of foods from a young age, is how I was able to get my kids to eat things like tofu.

My son thinks it chicken. I tell him it’s tofu chicken squares and he eats it right up.

We’ll also be making barbecue meatballs with homemade meatballs. They are easy to make when you have the homemade meatballs waiting in the freezer. 

The island chicken on this week’s meal plan is also a great freezer meal too. If you haven’t tried it yet, I highly recommend it giving it a try.

I know in the fall, when there’s newly picked apples to be had, I love to make apple recipes. There is just something about fall and apples. This mini apple muffin recipe is really delicious. I added a nut crumble topping to them to add a little crunch and extra flavor. This recipe can be made dairy and egg free too.

  1. My kids are the same way! Parents of picky kids always ask what I did and I’m like, “Um, I never gave them a choice?” Those meatballs look delicious! Have a great week.

  2. That’s so great that your kids will eat tofu. I think my family would revolt! I tried buying my husband some almond milk because the cow’s milk was upsetting his stomach, and you would’ve thought I was trying to feed him poison…he just does not like to try new things, even if they are better for his health, and the kids have learned his tricks too 😉
