Halloween is past and we are heading into Thanksgiving. But you probably have some Halloween candy hanging out around your house, am I right?

When I was young I always liked it when we had Halloween candy leftovers. I would take the leftover candy in my lunch to school with me and eat a bunch on Halloween. You could also trade Halloween candy with your friends bargaining for your favorite type of candy. For me, that favorite was always the fun sized candy bars.

While noshing on the leftover Halloween candy is delicious, using it in a recipe can make it even more appealing. After all if you are going to a party or having people over for dinner it just doesn’t seem quite right to put out or bring a bowl of Halloween candy. But if you use the same candy in a recipe that’s a whole different thing.

I know at our house brownies are a favorite. What’s not to like about a brownie, it has a nice little crunch on the top and a soft gooey center of chocolate deliciousness. When I’m making brownies for our family I almost always bake them in muffin cups. You see, we all love those crisp edges on the brownies and when I bake them in a muffin cup everyone gets the perfect balance of soft gooey center and crisp delicious edges making everyone happy.

I want to share a great leftover Halloween candy solution, so I thought I would make my standard brownie bites into something a little more special by adding Halloween candy to the center. That’s how these yummy BUTTERFINGER® Stuffed Brownies were born.

I headed out to Walmart to go shopping for my baking supplies. I checked my Ibotta account and found an Earn $1 with Ibotta coupon for the BUTTERFINGER® Fun-Size candy bars so I saved a bit of money too. Which is always a good thing.

Making the BUTTERFINGER® Stuffed Brownie Bites

I started by mixing a batch of our favorite brownie batter. I like to use a family recipe that I’m sharing below, but a brownie mix from the store will work too. Mix the brownie batter and fill each of the muffin cups or tins to about half full with batter. Then drop half of a BUTTERFINGER® Fun-Size candy bar onto each muffin cup. Don’t press them in just lay them on top. The candy will sink a little when they bake.

Add another layer of brownie batter, just to fill the brownie cups about 2/3 full and then bake until cooked through. I let my brownies cool completely and then frosted them with a yummy peanut butter frosting. It went so well with the peanut butter flavor that is in the BUTTERFINGER® candy bar.

After the brownie bites were fully cooled, I frosted each of them with the peanut butter frosting. Then to make them look and taste even better, I chopped up a few of the BUTTERFINGER® Fun-Size candy bars and dipped the frosted brownie in the candy.

It added a yummy crunch to the top of the brownie bite. These turned out to be the perfect balance of chocolate and peanut butter flavor with a nice crunch on top and inside the middle of the brownie.

Halloween Candy Solution, BUTTERFINGER® Stuffed Brownie Bites

Ingredients
  

  • 5 tablespoons Cocoa Powder
  • 2 cups Sugar
  • 1/2 cup Oil
  • 4 Eggs
  • 1/2 teaspoon Salt
  • 1 1/4 cups Flour
  • 1 teaspoon Vanilla
  • 9 BUTTERFINGER® Fun-Size candy bars cut in half
  • 5 BUTTERFINGER® Fun-Size candy bars chopped for topping

Instructions
 

  • In a bowl, mix the sugar, oil, cocoa powder, and eggs until well combined.
  • Add the flour, salt, and vanilla to the egg mixture and stir to just combine.
  • Fill 18 silicone muffin cups or greased muffin tins half full with batter. Add half of a BUTTERFINGER® Fun-Size candy bar to each one.
  • Top with a little more batter and bake at 350 degrees for 20-30 minutes or until the brownies are cooked through. Let cool completely and then frost with peanut butter frosting (see recipe below).
  • Dip the frosted muffin bites into the chopped BUTTERFINGER® candy, pressing slightly to get candy to adhere to frosting.
  • Enjoy!

Peanut Butter Frosting

Serves: 1 1/2 cups
Ingredients
  • 1/3 cup Peanut Butter
  • 4 1/2 cups Powdered Sugar
  • 1/4 cup Milk
  • 1 teaspoon Vanilla
Instructions
  1. Beat peanut butter with the powdered sugar to combine. The mixture will be dry.
  2. Add in half of the milk and the vanilla and beat well with a mixer.
  3. Slowly add the rest of the milk to reach the desired consistency for spreading.

  1. Butterfinger and brownie =all win here! I don’t usually like Butterfinger on it a own as I feel like it needs more chocolate and this is the perfect fix!
