Luscious Lime Cooler Bars

Easy to make dessert, Luscious Lime Cooler bars. So yummy and refreshing.

There is just something about green food and St. Patrick’s Day, that just go together. Don’t you think? So I couldn’t resist sharing a recipe that was at least partly green in color. After all, who knows, you might need a yummy green dessert to share at your next St. Patrick’s Day party. Am I right?

When I think of green, I think of lime. While I was pondering what to kind of dessert to share, I remembered how much I love lemon bars, lemon meringue pie, and other things lemon. I also thought it’s been a long time since I’ve made lemon bars. That’s when it hit me to make these delicious luscious lime cooler bars.

I thought, just substitute the lemon with lime and it would be a great dessert and have a hint of green for St. Patrick’s Day. Well, I did end up adding a little food coloring to the filling to give it a little boost of green color. Otherwise, it would have ended up looking like lemon bars with green flecks of lime.

These lime cooler bars have a great combination of sweet and tart with a yummy cookie like crust.

If you haven’t made lemon or lime bars before, you are in for a yummy treat. They are like a shortbread cookie with a yummy lime pudding on top. The crunch of the cookie bottom goes so well, with the crisp tart-sweet flavor of the lime on top. If it had chocolate mixed in too, it might be the perfect dessert. Or maybe not, lime might not go very well with chocolate.

Making the Lime Cooler Bars

To start, you need to make the crust for the bottom of these bars. Mix the sugar and the butter in a bowl first. Then add in the flour to make a crumbly textured dough. Press the dough into a square baking dish and bake for 20 minutes.

While the crust is baking, it’s time to mix up the lime filling. If you will be using fresh limes, you will need to juice about 4 limes to get the right amount of juice and zest two limes to get enough zest for the recipe.

Making the Lime Cooler Bars Filling

In a clean bowl, I just cleaned the one I was using for the crust, add the eggs, lime zest, lime juice, sugar, flour, and baking powder. I also added a couple of drops to green food coloring too. But you can leave it out if you want to. Beat it with a mixer for a couple of minutes or until combined well.

After the crust has baked 20 minutes, top with the lime filling. The lime filling will be really runny at this point, it will thicken as it bakes. Bake another 20 minutes.

Let cool. Then sprinkle with a little powdered sugar on top, if desired. These lime bars turned out so good. Just the right balance of tart and sweet with a little crunch on the bottom too.

Ingredients
  

Crust

  • 1/3 cup Dairy Free Margarine or Butter
  • 1/4 cup Sugar
  • 1 cup Flour

Lime Filling

  • 2 Eggs
  • 3/4 cup Sugar
  • 2 tablespoons Flour
  • 2 teaspoons Lime Zest
  • 3 tablespoons Lime Juice
  • 1/4 teaspoon Baking Powder
  • 2 drops Green Food Coloring optional
  • Powder Sugar for dusting optional

Instructions
 

To Make the Crust

  • Mix the sugar and the butter.
  • Add in the flour and mix until crumbly
  • Press into a 8x8 inch baking dish
  • Bake 350 degrees for 20 minutes

To Make the Lime Filling

  • Place the eggs, sugar, flour, lime zest, lime juice, food coloring and baking powder into a bowl.
  • Beat with a mixer for about 2 minutes.
  • Once the crust is done baking, pour the lime filling on top.
  • Bake at 350 degrees for another 20 minutes or until the lime filling is set.
  • Cool and then dust with powdered sugar if desired.

  1. Lime bars sound great! Anything with fresh zest is such a treat. I don’t eat grains or processed sugars but I bet there is an almond flour/honey version. It’s so much work to zest the skin, but I will try sometime!
