  • 3/4 cup Cornmeal
  • 1 1/4 cups Flour
  • 1 cup Sugar
  • 1/2 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 1 tablespoon Soy Flour or 1 Egg
  • 3/4 cup Soy Milk or Milk
  • 1/4 cup Oil


  • In a bowl combine all the dry ingredients and whisk to combine.
  • Add the soy milk and oil. Stir to mix until all the dry ingredients are moistened.
  • Bake in an 8-inch pan or cast iron skillet at 425 degrees for 25 minutes or until golden brown.
