Almond Joy Cookies

Ingredients

  • 2 1/4 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 14 tablespoons dairy free margarine or butter if you don't need to eat dairy free
  • 1 1/2 cups Sugar
  • 2 Eggs
  • 2 1/2 cups Shredded Coconut
  • 2 cups Chopped Almonds
  • 2 1/4 cups Semisweet Chocolate Chips

Instructions

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with a Silpat liner or parchment paper.
  • Whisk flour, baking soda, and salt in a bowl set aside.
  • In another bowl cream butter and sugar until fluffy.
  • Add eggs one at a time mixing each one in until fully combined.
  • Add the flour mixture and mix until just combined.
  • Stir in coconut, almonds and chocolate chips.
  • Drop by the teaspoonful onto the prepared cookie sheet and slightly flatten each cookie.
  • Bake for 10 minutes, then cool on sheet for 10 minutes. Remove to a rack to cool completely.
