Preheat the waffle iron on medium to medium high heat.
Place all dry ingredients into a bowl and whisk to mix well. If not using eggs, add the soy flour in with the dry ingredients.
Measure the milk and oil into a large measuring cup. Add the eggs if using and vanilla. If not using eggs, add the water to the milk and oil mixture. Whisk to combine.
Pour the wet ingredients slowly into the dry ingredients while stirring. Stir until the dry ingredients are just moistened.
Sprinkle the raspberries and chocolate chips on top of the batter. Using a spatula gently fold them in.
Spray the waffle iron with non-stick spray. Spoon the waffle batter onto the waffle iron and close.
Cook until there is very little or no steam coming from the waffle iron.
Open and remove the waffle. If you’ll be holding the waffles until all the waffles are made, place the cooked waffles in a single layer on the oven rack. Set oven temperature to 200 degrees.
To make these waffles egg free, use 1 tablespoon of soy flour with 1 tablespoon of water for each egg in the recipe.
To make these dairy free, use the same amount of soy milk, almond milk, coconut milk, or juice in place of the regular milk.
