In a bowl, place the flour, baking powder, and salt. Whisk to mix well.
In a large bowl, place the egg and whip it with a whisk. Add the oil, vanilla, and brown sugar in bowl and whisk to combine.
Add the dry ingredients to the wet ingredients. Stir and fold until the flour is moistened. Be careful not to over mix.
Scoop cookie dough with a teaspoon or cookie scoop and roll into balls.
Place the white sugar into a small bowl. Roll the balls of dough in the white sugar to coat.
Place the rolled cookie balls onto a lined cookie sheet.
Bake at 375 degrees for 5-7 minutes. Or until the tops of the cookies looked cracked and the edges are slightly browned.
Place the baked cookies on a wire rack too cool.
Store brown sugar cookies in an airtight container to keep them soft and chewy.
Notes
To make vegan…Add 1 tablespoon of soy flour to the dry ingredients and 1 tablespoon of water to the wet ingredient in place of the egg.OrUse a flax egg, take 1 tablespoon of flax meal mixed with 2.5 tablespoons of water.
