Recently I purchased nine pounds of boneless, skinless, chicken breasts on sale and I made them into meal packs for the freezer. I made eight different meal packs from the nine pounds of chicken. All of them are really easy to make and the whole process took me less than an hour.

Here’re the meal packs I made for this freezer cooking chicken session,

  • Barbecue Chicken
  • World’s Best Chicken
  • Italian Chicken
  • Easy Sesame Chicken
  • Chicken Marsala
  • Herb Rubbed Chicken
  • Fajita Chicken for the Freezer
  • Cranberry Chicken

All of these recipes are marinade chicken recipes. I add the marinade to the freezer bag and then add the chicken to the bag and that’s it.

Except for the Easy Sesame Chicken and Marsala Chicken, for those two recipes I just dice the chicken and place it into the bag. Then the chicken is ready to go for those two recipes. I prepare the rest of the ingredients for those two recipes the day I’m cooking them.

Other Ingredients Needed for the Freezer Recipes

  • Mustard
  • Maple or Pancake Syrup
  • Red Wine Vinegar
  • Italian Dressing
  • Paprika
  • Salt
  • Garlic Powder
  • Brown Sugar
  • Pepper
  • Onion Powder
  • Cumin
  • Chili Powder
  • Onion
  • Whole Berry Cranberry Sauce
  • Garlic
  • Oil

How to Assemble the Freezer Chicken Packs

I start my freezer cooking session by adding the name and date to each of my freezer bags. I find that for our family the quart size freezer bags work well.

We usually eat one pound of chicken for the four of us, if your family is bigger just double the marinade recipes and double the chicken, you’ll need to use a gallon size freezer bag if you double the recipe.

Once the bags are labeled, I start to make the marinade for each bag. I add all the ingredients to each bag, seal and squish it around to mix it well.

Then I place each of the bags with marinade into a big bowl to keep them upright while I prepare the rest of marinades and get ready to cut the chicken.

Preparing the Chicken

The chicken breasts I purchase are often very large. The ones I get from Zaycon Fresh are almost 1 pound each. I will cut up a chicken breast to make four portions from one chicken breast, since they are so big. I like to cut them in half lengthwise and then cut them in half again. Making for a nice serving size of chicken for each one of us.

If the chicken breast is a little smaller, I will use two for each meal pack and just cut them in half lengthwise once. For the Easy Sesame Chicken and Marsala Chicken, I will dice up a breast for each meal.

If you like to watch videos learn, I made this video show you how I cut the chicken for these meal packs.

Once the chicken is cut for the recipe, I add it to the marinade. When I add the chicken to the freezer bag, I try to remove as much air as I can by folding over the top and sealing it. It works quite well.

Then I place the freezer chicken package into the refrigerator to chill and marinate a little while I make the rest of the chicken packs for the freezer.

Freezing the Chicken Packages

I like to lay the chicken packages flat in the freezer. I layer them into a box in the freezer to keep them in one place and to keep them from sliding out when I open the freezer door.

If you have limited room in your freezer, you’ll want to freeze the chicken meat packs flat then once frozen, you can stand them up on end to make more room in the freezer.

Using the Chicken Freezer Packages

When you are ready to prepare the freezer chicken packages, let them thaw in the refrigerator overnight and then prepare as the recipe calls for. All of the recipes can be made in a skillet or in a crockpot.

But for some of the recipes, we prefer to use the grill rather than cook them in the crockpot. You can decide what your family likes best. The crockpot method makes it really easy to start the meal and forget about it until dinnertime.

I’ve put together a free e-book that you can download my recipes along with the links to where you can print the two recipes for the Easy Sesame Chicken and Chicken Marsala. Just click the link below!
