I’m so glad summer is here. It’s starting to heat up and so I’m starting to make some cool treats for our family. Since we need to eat diary free, I like cooking with almond milk. In the morning, smoothies with almond milk are a really great treat. But ice cream is the favorite of my family.

Summer would not be complete without making a batch of ice cream. Or maybe a batch a week. There is just something about homemade ice cream. It brings back so many happy memories from my childhood. I always have my kids help make ice cream just like I did when I was a kid.

I knew with cherries just coming into season they would be perfect for our ice cream. My kids also love chocolate chips, I mean who doesn’t like chocolate, so we added some to our ice cream too. It’s a great balance of creamy and delicious almond milk, chunks of cherry and little bites of chocolate. Who could ask for more?

Dairy Free Cherry Chocolate Chip Ice Cream

Ingredients
  

  • 1 cup Cherries pitted and chopped
  • 1 package Soft Silken Tofu
  • 1 cup Silk Almond Milk Blends
  • 1/3 cup Oil
  • 1 cup Sugar
  • dash of Salt
  • 1 tablespoon Vanilla
  • 1/2 cup Mini Chocolate Chips

Instructions
 

  • In a blender add the tofu, almond milk blend, oil, sugar, salt and vanilla. Blend until smooth.
  • Add in 1/2 cup of cherries and blend.
  • Pour the mixture into a ice cream maker and freeze.
  • When the ice cream is almost done add in the rest of the chopped cherries and chocolate chips.
  • Once ice cream is done, place it into a freezer container and freeze for at least 2 hours.
  • Enjoy!

Sometimes when the ice cream man is making his way through our neighborhood, it’s good to have a nice cool handheld treat for the kids. Just for times like these, I will make some cool and fruity cream popsicles.

They are so easy to make and the kids love them. I just use half almond milk with half fruit puree. These were made with strawberries from our garden. Just blend and freeze. It’s really that easy!

Another cool treat that my family loves, and is good for them is smoothies. During the summer, there are so many great fruits available it’s hard not to make smoothies everyday. I like to package cut up fruit and put it in the freezer.

Then when we are ready for a smoothie, I just add a few frozen chunks of fruit to a cup of almond milk and blend. It’s a yummy, frosty, good for you, breakfast or treat.

  2. Great photos with the little ice cream bowl. I use my cereal bowls, which means I put more scoops than one so probably not the best for portion control… maybe it’s a reason to get ice cream bowls, besides the fact they are little and adorable!
