Cooking for the Freezer, Teriyaki Chicken

Summer is coming soon. With summer comes grilling. To make getting dinner on the table even easier in the summer, I like to prepare meat packs for the freezer. Things like pre-made hamburger patties, chicken in the marinade and steaks pre-seasoned with rubs for the freezer.

Having these meat packs waiting in the freezer makes it so easy to get the meat ready for dinner. One of our favorite meat packs to have on hand is Teriyaki Chicken.

Making teriyaki chicken for the freezer is super simple. Just cut up the chicken into serving sized pieces and place it into a freezer bag. Make a batch of teriyaki sauce, or buy some from the store. Add to the chicken to the package, remove the air, label and freeze.

Making the meat packages, means I only have to mess with the raw meat once, which is a plus for me. I hate dealing with the mess of raw meat and all they yucky juices. It also means I having a few easy to make meals on hand for those days when I know I’ll be pressed for time at dinner.

Preparing the teriyaki chicken is easy too. I place the frozen teriyaki chicken in the refrigerator the night before or in the morning. I let it sit and thaw all day. While it’s thawing it will be marinating too, without having to do anything at all.

Once the chicken is thawed. Grill on the grill or if it’s not good enough weather to grill outside, broil or bake it in the oven. I prefer to grill our teriyaki chicken. I grill it on each side about 5-9 minutes depending on the thickness of the chicken. Then I check it with a meat thermometer for doneness.

Once the teriyaki chicken is done cooking. I’ll wrap it in foil and let it sit and rest for about 10 minutes. By letting the meat rest the juices stay in the meat instead of running out when you cut it.

I like to serve the teriyaki chicken with a few stir fried vegetables and a side of rice. Having the teriyaki chicken in the freezer ready to go makes this meal an easy one for a busy day.

Ingredients
  

  • 1/3 cup Soy Sauce
  • 2 tablespoons Honey
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Ginger grated
  • 1 clove Garlic minced
  • 1/2 teaspoon Onion Powder

Instructions
 

  • Mix all the ingredients together.
  • Pour over meat as a marinade.
  • Discard marinade after done marinading the meat.
