This is my plan for our dinners this week. I am making some quick and easy meals that we have often.

Pan Fried Chicken Breast, Rice Pilaf and Fruit
Stir Fry Lettuce Wraps with Rice
Build Your Own Haystacks, Fruit
Chicken Artichoke Casserole, Noodles and Salad
Southwest Roll Ups, Salsa with Chips and Fruit
Crustless Quiche with Salad and Fruit
Beef and Celery over Noodles, Salad and Fruit

  1. Your menu looks great–chicken artichoke casserole piques my interest. Sounds really good! We are sticking with pretty much tried&true recipes this week. I’d like to focus on the house and organization instead. But I plan to bake a bit 🙂

  2. We are going to be eating some of the freezer meals that I made during the 4 Weeks to Fill Your Freezer series, as well as some turkey enchiladas and breakfast for dinner.

    That chicken and artichoke casserole does sound good! Will have to try it next week since I have a ton of chicken in the freezer from a recent deal at the grocery store.
