Freezer Cooking, Cooked Ground Beef Packets and Taco Potatoes
I was able to purchase some ground beef on sale at Safeway this week so I decided to cook some up for the freezer. When I do freezer cooking most of the time I prepare the meat and freeze it. For example today I just cooked up some ground beef and froze it in meal sized packages. Having the meat pre-cooked helps me to save time. So we don’t end up eating out as much.
I like to have some cooked ground beef in the freezer waiting for a day when I need a quick meal. I use the cooked ground beef packages all the time in last minutes dinners. Sometimes I will add taco seasoning to them for tacos or burritos. Other times I will add one to simmering pasta sauce for spaghetti or a quick macaroni skillet dish or cheeseburger skillet. Really any recipe that takes ground beef.
I also found a new recipe that has become a family favorite of ours, Twice Baked Taco Potatoes. The first time I prepared these I made a double batch and we ended up not even having any left to add to the freezer. This time I ended up with a few for the freezer but they are so popular with my family it is hard for them to last long enough to make it into the freezer.
After my freezer cooking I had enough of the Twice Baked Taco Potatoes for a lunch for my family. After we had them for dinner that night. I also ended up with 8 packages of cooked ground beef and another 8 packages of raw ground beef that I froze for later use in the freezer.
I am hoping to get some rolls made for the freezer next week and since I was able to purchase 18 pounds of grapes for $3 I am sure I will be freezing some of them for smoothies sometime this week. When we get tired of eating grapes.

I definitely need to try out your taco potatoes…they look like they would make a great lunch or easy dinner. My daughter isn’t a big fan of potatoes, but if they had cheese or meat in them, she might try them 🙂
Erin, I was so shocked when the lady at the store told me the price was $.49/lb or if I would buy a whole case 18 pounds it would be $3. So of course I grabbed a whole case. I gave a bunch to some of our neighbors and I will be freezing some too. I love it when I can find a great deal like this one.
My son can be a little picky about the skin on the twice baked taco potatoes, but he just eats the inside and loves them. I hope if you make them your daughter will like them too.
